I decided that for Easter I wanted some Carrot Cupcakes, while looking on Wilton's ( you know the cake accesories supplier) website I found a recipe for Cream Cheese Filling for cupcakes. mmmm. So when I decided to carrot cupcakes, I HAD to add try this. I also made a cream cheese frosting mmmmmmm. They were mighty yummy! I need to get Todd to bring them into work, so we don't end up eating all 24. (The kids don't really like them)
so here is how I made them.
I used a box carrot cake mix and made the cupcakes, let cool.
Then I made the cream cheese filling and put that in a pastry bag with a large round tip on it.
I sqeezed the filling in- next time I will try and figure out how to do more in it with out bursting it, because I ended up with lots of filling left over and it is just too good to waste. :)

Ingredients:
1 pkg (8 ounces) cream cheese softened
1/2 cup confectioners' sugar
1/4 cup milk
Makes: About 1 1/2 cups.

the recipe for the icing I found in a wilton book, but here is one similar on their website, the one i used was i think the same except for everything was halved and there was no orange zest or juice
